Passing Time at the Trout Club

 

 

 

 

 

 

 

 

A Fine Brine for Smoked Trout...

 

One two-litre bottle of Vernor's Ginger Ale

1/2 c. Kosher Salt

1/2 c. Dark Brown Sugar

Mix together, add fish and let sit in the fridge over night.

Pour residual brine in smoker's lower pan and add 1/2 gallon Apple Juice.

Smoke in your preferred fashion using Apple wood chunks for 3 - 5 hours
